Max/Min layers with shape files in ArcMap?

I have 28 files each with a field called ‘Height’ in the same data frame, what I’m looking for is a way to make a buffer to create a new layer with the minimum and maximum height for each field.
My data frame looks like this, for example:
Fields: Date, Longitude, Latitude, Height
Date,Latitude,Height
15-05-2016,53.3036,21
15-05-2016,53.3036,21
15-05-2016,53.3036,21

What I’m looking to do is make a layer with one row for each field and have both the minimum and the maximum as the value. Something like:
Date,Longitude,Latitude,Min,Max

Anyone any ideas?

As you are using shapefiles, you can use Advanced SQL in Table of Contents:
